Preserving plant values

Incorrect/Inadequate post-harvest treatments can cause up to 90% of the effective agents to be lost. Dissimilatory, autolytic and microbial processes as well as subsequent contaminations in the sensitive procedures between harvest and processing can irrevocably destroy the quality of the raw material. Depending on the product, the plants must be chopped, cut, shredded, sorted, washed, fermented, dried, or pressed or frozen while fresh. These technical procedures must be synchronized with the physiological processes that occur postmortem.
